My great faux ice cream sandwich recipe:

2 Chocolate Graham cracker squares

2 – 3 T Lite Cool Whip

Freeze  (Enhanced version:  Add mini marshmallows & mini chocolate chips to the cool whip)

On a busy, hurried day you will love this crockpot recipe for BLACK BEAN CHICKEN:

Just 4 ingredients:

1 lb. boneless, skinless chicken breasts (straight out of freezer) still frozen

2 cans of black beans (undrained)

1/2 cup of brown rice

1 16 oz jar of Salsa (I use Pace medium)

Just place the chicken breasts in the crockpot and pour the other ingredients over top of them.  Cook on low for 6 – 8 hours.  When you return home from work, stir until you’ve broken up the chicken to your satisfaction.

Serve on tortillas with sour cream, cheese, chopped tomatos, guacamole etc;

If you like corn you might consider it as a fifth ingredient in the crock pot.

One of my newer followers expressed some disappointment at the # of recipes I had on my blog. I assume that is because she has eaten some of my cooking. Well, long story short – I’m gonna add a few more in the coming days. I just wish I knew more about how to make this tab more attractive and user friendly – but I’m clueless!

Cheesy Vegetable Soup with Tortelinni:

2 – 16 oz. pkgs of Calif. Blend vegetables (frozen)
1 can Rotel tomatoes
3 cans of chicken broth
10-12 oz. Velveeta
1 pkg of cheese tortelinni

Simmer the vegetables in the chicken broth and rotel. Once vegetables are cooked to your satisfaction add the Velveeta to liquid. Don’t boil, just allow to melt and stir. Last add your tortelinni until heated thru. (I like mine a little thicker, so I put a little corn starch in some cold water and while soup is bubbling, I slowly pour and stir.)
