Black Bean Chicken

On a busy, hurried day you will love this crockpot recipe:

Just 4 ingredients:

1 lb. boneless, skinless chicken breasts (straight out of freezer) still frozen

2 cans of black beans (undrained)

1/2 cup of brown rice

1 16 oz jar of Salsa (I use Pace medium)

Just place the chicken breasts in the crockpot and pour the other ingredients over top of them.  Cook on low for 6 – 8 hours.  When you return home from work, stir until you’ve broken up the chicken to your satisfaction.

Serve on tortillas with sour cream and cheese.
